I started my day walking with Ruby (the dog) in the park.. so freezing cold.. I was looking forward to my hot shower and then meeting with my friend C. at Vlaamsch Brodhuys for a nice breakfast, we started healthy with a sandwich Hummus, I really think Vlaamsch Brodhuys has a very good hummus they serve! But of course after finishing it we started to crave for something sweet.. I mean come on!! the pies are just staring at you like EAT ME! EAT ME..! and as I'm not made of steel.. human as I am I ordered the Lemon meringue and C. ordered the raspberry pie! We both loved it! MMMMMmmmm..oh fuck even when I'm blogging about it I again crave for the pie! It's addictive!
Later in the afternoon I was meeting up with my friend D. at Greenwoods for coffee.. not even planning to eat.. but just to have a nice coffee & tea to catch up! But hey... if you continuously see waitresses serving delicious looking food all the time and then ask you to see the menu ..who can say NO to that?! exactly.. I wasn't even hungry but I eventually ended up ordering the Portabello mushroom with goatcheese (yeah I know.... always the same order haha) and then because I missed out on D. his birthday we decided to order (I'm almost ashamed to tell this..) a nice piece of Lemon Meringue! again? YES AGAIN! haha.. I just love the fluffiness of the eggwhites and the sourness of the lemon.. really who invented that pie?! I'm now officially a Lemon Meringue Addict!
I think I might make my own hummus again tomorrow, it's been a while. It's really easy to make.. and I just love it to have it in the fridge.. Dip some carrots in the hummus MMMmm. a healthy & delicious snack.(to compensate my shameful pie-rathon). I'm going out for dinner at 19:30. will write about it first thing tomorrow!

This evening I was going to 'Dog-Sit' on my friends dog Ruby! I walked all evening with Ruby, although it was cold I was really enjoying my walk in the park and down the canals of Amsterdam..
Later I strolled down the Utrechtsestraat and then I saw that 'Frozz' had like a winter make-over.. from 'Frozz' to 'Oodlz', so instead of frozen yoghurt you now can get your fast food organic noodle soup there or to-go !
It's perfect for those who are busy or don't feel like cooking and just want something fast-food but a healthy alternative !
For only 6,- euro I had a simple but nice hot noodle soup, a great price-quality balance and I love the fast service!! I asked the girl behind the counter to make mine extra spicy (you know me..I always like to spice things up ; ..) she even told me they make their own chillie sauce.. aint' that great?!
Oh My Gaawwshhhh!! Yes people.. you might have heard the rumors.. and so it's true! Starting from today my Famous Carrot-Cake will be on the menu of cafe/restaurant 'Het Paleis' in Amsterdam! (near the Dam square)
So if you don't feel like ordering a whole pie from me just go cycle your way to 'Het Paleis' and get yourself a nice piece of organic carrot-cake made with much Care & Love by Me, really ..you'll taste the difference.. !

Oke I know I was all super enthusiastic about the Weckpot.. .. well today I arrived at work, and the moment I wanted to get my Weckpot out of my bag to put in into the fridge I saw the glass had broken! FUCK, there goes my lunch and FUCK my beautiful bag all dirty and smelly! Stay calm.. breath in and out I said to myself.. there are worse things in life Eva ;) ! Don't ask me what I had for lunch instead cause it was just really sad... I swear if you had seen my face during lunch you would have felt pity for me!
But hey look what I bought today eh? Yes people.. A NEW WECKPOT.. stubborn as I am I bought a new one haha.. this time I bought one at a store called 'Blokker'. I even think that this design is even nicer because I don't need the metal clicks ( I was going to loose those anyways so good thing that weckpot broke , haha ). But I mean a tupperware box just doesn't do it for me... For me food must not only taste amazing but I find it very important too that it looks just as amazing as it taste!
I made a delicious Quinoa salad with sundried tomatoes, brocolli, grilled mushrooms and pomegranate! Damn I really can't wait till tomorrows lunch time..

Today I had my friend G. over for dinner. I felt like eating vegan today.. so Tofu it is. I asked G. beforehand if she's into tofu and sure she is! I bought a nice piece of pure organic tofu! These days even my friend Albert sells Organic Tofu!
This dish is really easy and quick to make, and the taste is just delish!
The thing with tofu is that most people say it taste like nothing or that they don't like the structure of it Well there are many different sorts of tofu, but the one I used for this dish is like the more hard one. So the organic tofu you find in your supermarket is perfect to grill, it wont fall apart in little tofu crumbs when you grill it. My secret is to grill my dices of tofu in some coconut-oil mixed with a spoon of 'Tom Yum' paste ( that's actually the paste you use to make the base for your thai tom ka kai soup ), this is my way of 'easy cooking' when I'm just to lazy to slice laos, ginger, garlic, red pepper and lemon-grass in little pieces.
The sauce I put on top is super super easy and a major success!! Crush a handful of cashewnuts and then add 3 shots of ketjap manis in a pan, add the cashew nuts and 2 shredded lime leaves, add the juice of half a lemon and 1 spoon of the Tom Yum paste. stirr it on max. heat for 2 minutes and pour it over the tofu and veggies! The nuttiness of the cashew nuts combining with the sweet and sourness of the ketjap manis and lemon is just really TO DIE FOR! with this sauce everything taste good!
I even had tofu haters here.. and whenever I make this.. they leave my hous as Tofu Lovers! seriously.. not kidding!
Fucking hell what a weather huh today.. snowing like crazy, I immediately went from work straight away to the store to buy myself some nice groceries, I had no clue whatsoever what to make myself today.. I let myself inspire by the grocery store.
I walked down the 'fresh fish area'..and I saw this beautiful piece of cod! MMmmm a nice piece of Cod is always good. It's been a while I made this delish dish and it's healthy too! It's super easy to make and really guys it will just take 20 min of your precious time! Scroll down to read more..
Put some water in the pan, let it boil. Meanwhile slice one carrot in thin slices, cut the tomatoes in half, (if you don't have small tomatoes use 1 normal size tomato and cut that one in 8 pieces), crush 2 garlic toes and slice up a nice chunk of ginger.
Mix everything in a bowl, make sure the bowl is a size smaller then your pan you're going to use (otherwise it won't 'steam', as seen on the image below).
Add 1 shot of chinese rice wine, 1 shot of japanese soy sauce ( I used kikoman) and 1/2 spoon of sesame oil.
Put the bowl with all ingredients in the pan with water and immediately put the lid on, make sure the water won't overflow the bowl (otherwise the natural gravy will be fucked) on max fire.
Wait for 15 min. add some spring union and some more drops of sesame oil and your done!
* If you like it spicy add a sliced open red pepper in it, if you leave the seeds in it will be even more spicy!

If you don't have a carrot just leave it out, but I like it because of it sweet taste it adds...and especially the combination of ginger and carrot goes really well! MMmmmmm!! ENJOY you hot looking followers, cause I definitely did! ;D
I recently saw a magazine where they had a great tip to make your own lunch in a Weck-Pot! You can get those in stores like the 'Xenos', 'Blokker' and 'Hema' for just a couple of bucks! They look very nice and are also eko-friendly because you can use them over and over. They're made out of thick glass so no need to worry that it will break, especially for me.. I can be very clumsy sometimes.
As I want to loose the kilo's I gained after the Christmas holidays I will stop eating bread and pasta these upcoming weeks, yes it's true people.. it really helps a lot if you want to loose just a bit of kilo's to cut the carbs out of your diet.
If you really can't resist carbs, then only skip them with dinner. This way you will reach your goal too but it might take a bit longer. Scroll down to read how I prepared my healthy lunch for tomorrow!
I thought it would be nice to have a delish Quinoa salad for lunch tomorrow, as my new workplace isn't in the centre of Amsterdam, I'd rather make my own lunch instead of the only option is to go out for a boring 'non-organic take away sandwich'.
I boiled the Quinoa in a stock of mushrooms (get those stock-cubes in any organic store), this way the quinoa will be nice flavourful and you don't need any extra seasoning at all. I cooked the carrots and broccoli for just a couple of minutes in the same stock as the quinoa. In the meantime I grilled some mushrooms with some cumin, salt and pepper.
When the Quinoa is done let it cool in the fridge, and after the veggies are drained rinse them with ice cold water.
Check when all the ingredients are cold and then layer for layer add everything in the weckpot, I also cut an Jazz Apple in slices and added them.
Last thing to do is get a fresh lime and squeeze the lime juice over the whole dish!
Close it, and you're DONE! I really am looking forward already to have my lunch tomorrow.. MMMmm can't wait!
