Do you know that feeling when you're walking down the streets and then some random stranger walks by you saying 'Can I order a 'FLIED LICE'?! ..well I guess..PROBABLY NOT lol! ! But although I love love LOVE eating Flied Lice (read: fried rice) I thought why not use quinoa instead of the rice and use the same technique as making fried rice normally..Well lordy lordddd… this dish came out absolutely amazing! It was so tasty..and really just so easy to make!
Like fried rice, every family, every person has its own way of making it.. so this recipe is how I thought it would be nice to flavour the fried quinoa, so again.. if you don’t like my seasoning..(you are crazy..nah kidding ;) ) but choose your own seasoning you love best!
Ingredients for 2 sexy people:
- 1 cup of leftover quinoa (or boil the quinoa and drain all of the excess water well)
- 2 egg2
- half a teaspoon of organic cuminpowde
- half a teaspoon of organic garlicpowder
- A shot of salty Soysauce
- Some linseeds
- Some mixed seeds
- Some Goatcheese ( I know this might seem weird.. but really.. this was such a great combo!!)
- Some leftover pomegranate
Start heating a round pan or wok, add some coconutoil and scramble the eggs with some salt and pepper. When the eggs are nicely scrambled get them out of the pan and set it aside. Put some coconutoil back in the pan and add the quinoa, spinach, linseeds all together with the seasoning (garlic, cumin and soysauce). You’ll see the fried quinoa is ready when the spinach is getting softer and smaller. Ok, we’re almost there but first throw back the scrambled eggs into the wok/pan and mix everything all together on maximum heat..mix mix mix for 1 minute and you are done now! Turn of the heat, put the fried rice into a nice bowl and sprinkle some chunks of goatcheese, seeds and pomegranate on top. This..my friends is a wonderful mix of Asian cooking technique combined with flavours and ingredients you wouldn’t have thought of using it in the first place.. but trust me.. this dish sure has a ‘Happy Ending’ lmao ;D
Summer is almost there guys... in my world that means.. "HOLY CRAP.. I need stop shoving everything that's edible in my mouth and get back into the best shape I possibly can!"... I just know I feel much more comfortable in my own skin if I tone up a bit more.. :D So let's do this !
Most important is that you don't skip meals, don't starve yourself and please.. please girl...eat that f#cking cookie if you really want it.. I mean.. 1 cookie won't make you fat!! Looking at a cookie and having a conversation with your own mind 'to eat..or not to eat' is just way more exhausting!!!
A great tip to get more exercise done in a fun and relaxed way! (this is how I rollll)
- I always love to meet a good friend after work/sport/dinner, for a nice stroll downtown in the evening. This way you'll see so much more from the place you live (in my case.. Amsterdam....hail to Amsterdam!). Somehow we always get into very deep conversation that are inspiring and so meaningful. I think everybody can agree with me that cycling or scootering in Amsterdam is great! BUT .. I'm the kinda girl who's always cycling/scootering like a crazy person so fast and quite the speedy gonzalez myself ...WOOPS ..so ..No I'm not really good to connect with when I'm on the road.. Pedestrians are much safer..and really..Walking is just so much more relaxed!! A very fun way to explore your city in a new way..
Besides.. I do a lot just on my own. When I don't feel like meeting up with anyone.. I stroll around and I seriously get the best ideas.. walking down the canals of Amsterdam is like therapy! .. feeling blessed! I hope you'll turn you telly off and put your laptop away.. try it my way.. it's addictive!

I have a confession to make...we've been living together for quite some time now.. I can hold you, touch you, yes.. even lick you whenever I feel like it.. and again.. you amaze me every single time..This my friends.. is the story of how 'Knifey' helped me crack up a fresh coconut! lol :D
You can buy fresh coconuts in just about every Asian Supermarket! They cost around 2,50 euro each. I used to drink these coconuts in Singapore like 4 to 5 times a day :| My mom would always warn me saying 'Eva, you can drink as much coconutwater as you like, just don't eat the white meat every single time..'. (unless you have the ambition to grow into a big mother f#cking giant??! Excuse my language..).. I had to learn it the hard way... urgh lol ;D
First things first...Use a strong solid knife, good quality is a life essential for your kitchen appliances honey! Don't be greedy spending some M to the Oney - MONEY on knifes.. unless you have the ambition to loose a finger 1, 2 or 3.. :O
Chop of the top carefully and use a straw to suck the juice right out of the nut! When you finished all of the delicious juice.. crack this thing up using more power and bang this thing HARRRD with your knife..(yeah girl.. let all of that anger go..haha)
Use a spoon to scoop out of the super sweet and tender 'meat' from this fruit... As you can see.. I'm eating it with much flair & grace.. haha ;D
I finished it all in what I think less then 10 minutes :O ..why so tasty?! WHY?!!

First of all a big big thank you to my dear colleague R. who introduced me to this super tasty flower/herb called 'Daslook'! This morning the following happened:
She walked up to me this morning with a flower in her hand..got on her kneels and..haha KIDDING..imagine HAHA!! No but really..so she walked up to me with a huge smile on her face and a flower in her hand saying..’try eating this Eva! It tastes really good!!’. As I was super curious.. I immediately ate the whole flower! R. was looking at me with this face like.. and?? Well...???What do you think???
Like..Oh My God..Let me tell you..uh WOW! What a surprisingly tasty flavour came out of this small flower!! It tastes a lot like spring onions or chives..but better!! I find the look of this herb so much more appealing for the eyes, their just super cute these small mini flowers don’t you think?!
I think that decorating your food with flowers is a total must.. especially when you live in Holland.. land of the most gorgeous flowers right?!!
Besides the super tasty flavour the ‘Daslook’ gives it's also MEGA MEGA healthy!! I still can’t believe you can get this for free, what a great gift from nature!

So duh..of course, for lunch I made myself an omelette, using some celery-salt (my newest addiction by the way..) some freshly grinded pepper.. and then these spiced up flowers! Check the exact recipe down below..

Well this ain’t really rocketscience, but I what I did was taking some of the flowers into the omelette mix and I added some later on to sprinkle it on top of the omelette.. MMMM this was such a great tasty lunch!!
TIP: This herb is also great to make your own fresh pesto out of it! I’m definitely going to try this and let you know how it turns out!
R. also told me that now it’s the season for this herb to grow at its best..little secret is.. there seems to be loads and loads of this herb at the Oosterpark. I know for sure what I’m going to do this weekend.. fill myself a bag with these little fellas. I will keep them good in the freezer, this way I can enjoy this herb longer

I'm feeling really happy that I can do all the things I love to do! Food made by me with a whole lot of love, eaten by people who eat it with a whole lot of love! I was getting a lot of good vibes from all you thankful eaters today, which makes me feel like I'm not really working !! "No shit does that kinda stuff really exist??!" - YES PEOPLE... it exist!!! ;D
Find something you're really passionate about and give it full force.. It's an understatement saying I love both my jobs!

GOOD MORNING you sexy piece of ass! As I mentioned yesterday.. I now start my days with quinoa puffs for breakfast. I thought it would be better to show you what it looks like...I mean.. since I am a foodblogger I guess that's what I'm suppose to do right? lol ;D
Even for the ones who are always rushing their ways through mornings. This is super easy to make, just a bit of (soy or goat..EEK! you deserve a round of applause) Yoghurt, a handful of Quinoa Puffs, strawberries, mulberries and somehow I hear you thinking.. like what on earth is that orange thing in the middle.. Well stupid, that orange thing ain't just decoration, that is a 100% fresh Incaberrie! Yes, one of the superfoods out there! I love buying them dried in stores but they are..let's just say.. NOT CHEAP! holy crap! Weird thing is, when you buy the incaberries fresh they're so much cheaper, like 1,50 euro or something. Besides I do feel that all nutrients are really in there when you eat fruits fresh instead of dried....Saying that.. just don't get me started on dried mango.. I just can't stop eating them.. f#ck nutrients..)
Can't believe the strawberries I bought are already so super tasty! Really.. they were soooo sweet.. Strawberries are one of my favourite fruits out there. When I was 13 years old I desperately begged my mom if I could pleaseeee pleasee start working at this farm picking strawberries...My mom thought.. WOW my kid already want to earn her own money.. HALE to this kid.. But really..It wasn't about earning my own money.. I was just super stoked I could eat strawberries the whole day in the broad daylight! I remember my boss back then, he always joked about my 'natural red lipstick'.. haha.. BUSTED!
Glad he thought it was funny. I just can't wait for Summer to begin.. I absolutely adoreeee summer fruits!

I absolutely fell in love with this product - Quinoa Puffs!! I came across these last weekend and they just draw my attention.. I mean look at it.. how can you resist a package showing cute round balls in it right?!! If you're a big fan of regular quinoa you're going to love THESE for sure!
I feel like it taste a bit like roasted nuts...which I absolutely LOVE! I'm totally hooked to these puffs and I now start my days with them for breakfast. A bit of (soy) yoghurt, fresh fruit and these balls.. and you are good to go honey!

I can't get enough of those Dutch cookies called 'Cocosmacronen'! As you guys know I buy them regularly at the Wednesday organic market (Haarlemmerplein - Amsterdam) from 'Pieman'. But I always had to choose.. either the 'balls' made without sugar.. or the 'balls' made with ginger/chilli flavour..So that got me thinking.. 'Why make me choose woman?!'..I mean.. it can't be that hard to make the perfect cookie combining the best of both worlds..RIGHT?! Cocosmacronen WITH Ginger/Chili flavour AND without sugar!
I'm not lying saying this is really the most easiest cookie recipe I'VE EVER posted.. actually I've never posted a cookie recipe..but still.. this is the BEST cookie recipe I ever posted!! lol.
Ingredients for +/- 25 mini cocosmacronen:
- 3 eggs
- a chunk of ginger (grated finely)
- +/- 2 cups of cocosflakes
- red chilli peppers (get rid of the seeds and make sure you chop the chilli super super fine)
- 3 tb spoon of coconut-blossom-sugar
tips & ideas:
- Use a bakingsheet
- You can go crazy with this recipe, I was even thinking of making these cocos cookies with some lemon zest and lavender. I think that would be a great combo too!
Preheat your oven on 170 C. Mix the eggs, ginger and chilli until it's one orange substance. Add the cocosnutsugar and mix again. Now add the cocosflakes carefully and keep on mixing it all well. I'm not sure how much cocosflakes I added, but just stop adding more when the substance is getting this crumbly look & feel (see image below). Make sure your hands are clean and turn the 'dough' into small rounds onto the baking sheet.
Put them in the oven for about 20 minutes on 170 C or get them out when they turned golden brown..
You can use maple-syrup or stevia instead of the coconutsugar. I just totally fell in love with this earthy smell & taste of the coconut sugar!
If you think the cookies aren't sweet enough to your taste...just add more..
Really..this recipe is just so easy to adjust to your own wishes!
As I was so enthusiastic about this new recipe I surprised my colleagues and a bunch of my friends last week with these ' coconutballs'. Their opinion?! They absolutely loved it! Now I hope you try this recipe too..
