With the stormy weather of last weekend I decided to do some good old baking at home. Somehow I feel extra blessed whenever the weather is super crappy and when I’m comfy at home cooking or baking for my loved ones. As I was craving for something sweet what not better than make myself a delicious chunk of banana bread! This recipe is super easy, super delish and (shocker) with no sugars and gluten involved, I know… thank me later ;D
I never make my banana bread the exact same, I always add in a different mixture of seeds, nuts and dried fruits. I don’t measure that shit, I just open my kitchen cabinets, grab some of everything and add it to the rest of the mixture. So whatever you like more, add it and you’ll make your own perfectly customised banana bread!
Ingredients for 1 Banana Bread:
3 big or 4 small bananas
1 tsp. vanilla
½ cup of dried grated coconutcrisps
2 cups of Buckwheat Flour
2 spoons of Baking Powder
1 spoon of Cinnamon
½ spoon of Nutmeg
Use a kitchenmachine to mash up the banana with the dates. When creamy add the eggs and mix again until it becomes a smooth paste. Add the vanilla, buckwheat flour, baking powder and spices. Beat well. Stir in the nuts and seeds. Spoon batter into the loaf pan (use coconutoil/ghee or a baking sheet before putting in the batter). Spread batter evenly. Pop it in the oven on 180 Celcius for about 45 to 50 minutes or until a knife inserted comes out clean. Cool completely before slicing. (I know, life can be tough sometimes...)

Serving your watermelon on a stick makes it way more fun to eat. Freeze them for a few hours and you have your all natural Ice Pops! Kids will absolutely love 'm and they'll love you even more for making them ;)

You might have noticed I’m pretty addicted to Black Rice lately. I tend to make a big batch and then leave a bowl in my fridge so I can enjoy this beautiful black grain throughout the week in a variety of easy-to-make cold Summer dishes. Eating great food without losing a lot of your precious time is very 2015 ;P! So, Last weekend I tried out making rainbow wraps using some of the black rice, combine all of this with a nice dip of Japanese Sesame Dressing and oohhh la laaaa!! What a party in my mouth! :D
The sticky texture of the black rice together with the fresh crunchy veggies and Japanese yellow pickled radish is just an amazing combo if you’d ask me! Other than steaming the black rice there is no cooking involved so every nutcase should be able to make this dish!

Ingredients for 12 Rainbow Wraps:
6 Ricepaper sheets
Finely grated carrot
Thin slices of cucumber
Japanese Yellow Pickled Radisj
Cold Black Rice
* Dip the wrap in some Japanese white sesame dressing and you’ll get an amazing food explosion in your mouth. Be careful though, it’s addictive ;)

My favourite season when it comes to food is definitely Summer! I just love love LOVE summer fruits so much!! I especially have a soft spot for red coloured fruits like strawberries, raspberries, cherries and watermelon. Really, I just can't get enough of it! Other then just eating a watermelon in its pure form it's also amazing to use in savoury dishes like this Refreshing Summer Gazpacho with this tangy Feta Mousse. MMMMmm.. this combo is just mind blowing.
This dish is also super easy to make and will for sure impress all your loved ones! I mean, just look at it, what a stunner this dish is!!
Ingredients for 4 servings:
1/4 red onion
2 gloves of garlic
1/2 a cucumber
3 cups of watermelon chunks
2 cups chopped tomatoes
1/2 cup of red wine vinegar
a drizzle of olive oil
Some salt and pepper to taste
some fresh chives (chopped finely)
A piece of red pepper (if you like things a bit spicy, I sure do!)
* slice up some extra cucumber in thin slices to serve the soup with :)
100 gram of feta cheese
8 spoons of (soy) yoghurt
the white part of a spring onion
Place all ingredients in a food processor and process until well blended and very smooth. Add more soy yoghurt or a bit of water as needed to get the nice structure. Cover and refrigerate for at least one hour before drizzling it over the soup.
We start with making the Feta mousse first. Place all the feta mousse ingredients in a food processor and process until well blended into smooth 'mousse'. Add more (soy) yoghurt or a bit of water as needed to get the perfect structure for drizzling.
Cover and refrigerate for at least 20 minutes before serving it.
Now combine all the gazpacho ingredients in a foodprocessor and pulse until it's smooth. Add in some salt and pepper to your taste. Slice up some thin cucumber strings and serve them with a drizzle of the feta mousse and some finely chopped chives.

I absolutely LOVE the refreshing taste of Lemon and Lime. You might not think of combining the two of them together in a dish but I highly recommend you to give this combo a try! How I got to the point of using them both was when I was making these wholesome bliss energy balls and I realised I didn’t have enough lime so I just naturally switched over to add some extra lemon zest and seriously… this upgraded my recipe in such a good way that I of course had to share it with you guys :D !
Even though I used quite a lot of lemon and lime these treats are no way near to a sour taste what so ever. They’re super sweet and full of nutrients. So yeah, a delicious sweet snack to treat yourself and the lovely people around you is always a good idea. Scroll down to get this super easy recipe!
1 cup of raw almonds
1 cup of pitted dates (remove the pit yourself)
1/5 cup of grated coconutcrisps
Zest of 2 limes
Zest of 1 lemon
*some extra coconutcrisps to cover the balls with
Use a foodprocessor to chop the raw almonds into a powdery structure. Remove the pit from the dates and mix it together with the almonds into a sticky dough using your hands (you can use a foodprocessor to for this step but somehow I think it’s nicer to use your hands for this recipe). Now add the coconutcrisps and zest from the lemon and limes and make sure all the ingredients are spread evenly into the dough.
The dough should feel sticky but not to sticky, if it’s to sticky then make some extra almond powder and add it or if you’re more into coconut flavour then add in some extra coconutcrisp instead.
Now roll them into bite size balls and cover them in coconutcrisps using a bit of pressure in your hands.
