After all my travelling I was happy to be home again and finding this super nice invite on my doormat! 'Chow' is the newest restaurant set up by Casper Reinders, a well known entrepreneur when it comes to restaurants, bars & clubs in Amsterdam! I'm invited to enjoy all the Asian goods at the official opening tomorrow!...AAAHH I'm so curious what the menu is going to be like..I really can't wait to TASTE IT .. life is GOOD!!! :D I will post more about this new restaurant soon, so stay tuned!
I know I know.. I'm like wayyyy behind with posting my recipes, please forgive me :D ! A while ago I experimented cooking with chickpeas for the first time and I fell in love with them! So this time I tried to make samosa's with a chickpea-spinach filling! MMmm...this was SO damn tasty! (if I may say so myself)
Ingredients you'll need for 2 hot looking bitches:
- 3 limeleaves (shred them a bit)
- 1 can of chickpeas
- a handful of coriander
- 1 teaspoon cumin powder
- 1 spoon of Kurkuma
- 1/2 garam massala
- 1 teaspoon of garlicpowder
- 1 spoon of paprikapowder
- some salt
- 1 red pepper (get rid of the seeds and chop it finely)
Put some coconut oil in the pan and add the limeleaves, after 20 seconds you can add the chickpeas (don't forget to drain the water first, the grated carrot and all the rest of the seasoning. Stir it all well on maximum heat. After 5 minutes stop the fire and get your pan OFF the heat. Now shred the spinach using your hands and meanwhile stir it all well with the rest. We don't need extra heat because otherwise the spinach will be to soggy You'll notice the spinach will be softer the moment you mix it with the rest of the chickpeas.
Well as this was an experimental dish, I tried different shapes, the classic springroll and the typical samosa triangle shape. No matter what shape we ate this was a major success ! We couldn't finish it all so I ended up taking it the next day with me to work! MMMmm.. I felt it tasted even better the next day..so good!

Oke I'm gonna do this as fast as possible, I'm in Indonesia right now and here it's 8 in the morning! Going to leave the hotel any time now. But I just felt like sharing what I had for dinner in Singapore in this lovely sushi restaurant I forgot the name of ( I will get back to you about that).
It was SO damn good! ohh.. but hey lucky me.. in a few days I will head back to Singapore (and.. EAT A LOT) :D
So tasty! A freshly green salad with avocado and shortly grilled salmon...MMmmmmm
