I sneezed 3 times yesterday so I would have at least expected a little bit of sun today?!? Hmm… as we can’t trust on the weather forecast in The Netherlands we need something else to focus on right? So let’s talk about food :D that never disappoints me!! Summer fruits are the best this time of the year I think, full of sweet flavour and energy given by our beautiful sun (when it’s out lol). Watermelon is one of my all time favourites and this Summer salad is just super easy and will always impress your loved ones! I've been making this dish many times in my life and with no fear I can say: I guarantee you for success'!! It’s a refreshing cold dish, no cooking involved, just some chopping work. So, chop chop, scroll down to find this amazing delicious recipe :D Ingredients for 4 sexy mother f#ckers:
¼ piece of a small watermelon 120 grams of Feta 1 Cucumber Some good quality olive oil Juice of half a Lemon salt & pepper Fresh Basil & Mint leaves What's Next?!? Chop the watermelon and feta in bite size pieces. Slice the cucumber in thin long slices (I used my cheese grater, but a mandoline would be more professional I guess) Make up the plate with these 3 ingredients set it aside and now it's time to make the dressing. Mix 3 spoons of oliveoil with the lemonjuice, salt and pepper and drizzle it over the plates. Add the Basil and Mint leaves and TADAAAA... Time to serve! xoxo The Cookteaser

Being back in Amsterdam and looking out of my window where I’m attacked by the rain who’s constantly knocking on my office window is not particular what I had in mind for this Summer?! So, thank god for memories and flashbacks, I just close my eyes and try to feel the nice and warm Mallorca vibes again and so, why not share some more Mallorca food stories with you guys?! Back in the amazing stunning kitchen of my friends I couldn’t resist but to cook there. One night we had my lovely friends over from Amsterdam and we organised a nice BBQ for all of us. I was taking care of all the side dishes and my friend T. worked his magic on the BBQ. It was on this trip that I made Pimentos De Padron myself. I've always been a big fan of this typical Spanish dish but I couldn't resist on adding a few more extra ingredients to spice up this dish to a new level. Hope you’ll like it as much as we did :D so scroll down for some crazy delish recipes! :D Ingredients for 1 plate: 1 bag of fresh green Spanish pepper 3 garlic gloves Spicy Red Paprika Powder Sea salt flakes 8 spoons of Ghee (or any other vegetable oil) What’s Next?!? Heat up the Ghee in a frying pan on max fire. When you see little small bubbles forming in the oil add the peppers and whole garlic gloves into the pan. Make sure the peppers are in the oil evenly. After 3 minutes you can add the spicy paprika powder. Mix everything well. Get rid of the oil and sprinkle some sea salt flakes over the peppers and you are done! :D Meatballs, who doesn’t love juicy flavourful beef meatballs ?!?! I had a glimpse in their kitchencabinets and I soon knew which spices I wanted to use for this dish. Tip, don’t be scared to use your spices. They’re ment to flavour your food so don’t be greedy and start sprinkle that shit :P Scroll further down to find the recipe! Ingredients: 500 grams of minced beef 1 spoon of Organic Cumin powder 1 spoon of Organic Curry powder 1 spoon of Organic Sweet Paprika powder Some salt to taste 1 egg What’s Next?!? Mix all the ingredients into a bowl and trun them into perfect shaped round balls. I never use oil when I make meatballs, there’s so much natural fat in the meat. So just make sure you heat up your pan properly before putting your meat in it. When their nice and goldenbrown and rose from the inside that’s your qui to turn of the heat. Mallorca is known for producing the most delicious Almonds! So what not better then making my Sweet Lemon & Lime bliss balls here? My friends picked some fresh organic lemons from their garden and I instantly used them for this dish. This feeling is just amazing. I love to feel close to nature and cooking this way makes it so much more special then doing your groceries in a supermarket.

A few days ago I arrived in Mallorca, that's in beautiful Spain. When you live in a busy city, in my case Amsterdam, I think it's super important to escape the city from time to time. Inhale some fresh air and surround yourself with beautiful nature instead of concrete walls will definitely do you good! I'm staying at my friends Summer house in Campos, Mallorca and their house is just mind blowing beautiful! The house is surrounded by their very own lemon, fig, pomegranate, orange and grapefruit trees and the most important space, the kitchen is just... I can't even... It's seriously my dream kitchen! It almost felt like the kitchen was talking to me saying... "Hello Eva, come and cook here with me" delusional or not, I knew I had to create some fabulous cooking here!! I toasted some homemade (glutenfree) Buckwheat-Nut Bread (I will post this recipe very soon) together with some Eggs sunny side up and topped them off with some fresh parsley and basil. You're probably like, bitch could be lying as you can't see the beautiful bread underneath but bitch ain't lying, pinky swear!! As if this isn't good enough to start my day with my friend J. came to me showing me a bag of Organic Matcha tea! Well I'll be damned, my all time favorite drink in the world even here in Mallorca! Pinch me please, life just got even better :D!! You probably have noticed, but the last couple of months I've been cooking less and less for myself then I usual do. I was cooking so much for catering that I just didn't feel like cooking again at home. I was relating cooking to work instead of relating it to love, care and joy. Since I'm here I've slowly started to feel connected again to myself, my own needs and the ability to create new dishes without feeling the pressure. Seriously, this feeling I have right now is SOOO GOOD! It's hard to describe it in words what I'm feeling now but in a nutshell, book yourself a f%cking holiday if you're feeling stuck or exhausted. Everybody needs this from time to time! Ingredients for 4 pers: - 3 big tomatoes - 2 red bell peppers - asparagus - 2 white onion - 1 garlic glove - 1 spring onion - 1/2 red pepper (you can leave this out) - a spoonful of Ghee (you can use any other oil) - garnish the dish with some fresh basil leaves (optional) Spices: - organic smoked red pepper powder - salt and pepper What's Next?!? Chop the tomatoes, half a onion and paprika in medium sized chunks. Drizzle some ghee in a pan and grill the tomatoes and paprika with the seasoning for about 4 minutes. Now add the garlic and red pepper and after 1 minute put everything in a blender and blend it until smooth. Put the sauce back in the pan and put it on low heat and add the springonions. Check the flavor and see if it needs more smoked red pepper, salt or pepper. Meanwhile grill the asparagus and season them with some salt and pepper. Get yourself another pan and drizzle some more ghee and slowly grill the onion rings, the strong sharp onion flavor will disappear this way and instead you'll get an amazing sweet taste in return. I'm a big sucker for onions prepared this way! When you set up the plate leave it for 5 minutes before serving. This way the grilled flavors from the asparagus and onions will infuse with the sauce. This way your sauce get much more depth in flavor! Hope you'll love this recipe as much as my friends and I enjoyed it!
