Oke .. If you're not feeling hungry after staring at these pictures here below you must be an ALIEN that's for sure! I mean come on! I think this really looks SUPER DELISH and I can tell you it sure tasted MEGA DELISH too! I made myself a lovely 'Waldorf Salad' last Saturday evening. Don't get confused thinking I ate bread with my gluten-allergy. The toast you see is 100%buckwheat bread, the one I bought at the organic market.
ingredients you'll need for 2:
1 granny smith apple
1 elstar apple
a handful of mushrooms
a handful of peruvian grouncherries (the orange coloured berries)
1 spoon of Black Truffle paste
4 slices of 100% Buckwheat bread (I eat this because of my gluten-allergy, you can use normal bread)
some crushed walnuts
2 spoons of truffle oil
2 pieces of (organic) Goatcheese.
What to do?
Preheat your oven on 200 Celsius. Bake your mushrooms in a bit of truffle oil and season them with a bit of pepper and salt. Meanwhile Use your spirooli to make spaghetti strings out of your apples, if you don't have a Spirooli..then GET ONE..haha ;) well you can use a sharp knife to and slice the apple in thin strings. Grill the goatcheese in the oven and set the timer on 15 minutes. After 10 minutes you can add the slices of bread in the oven, I like my bread more when it's toasted.
Meanwhile divide the apple spaghetti', the grilled mushrooms, and the peruvian grouncherries on the plates. When the timer hits the bell you can put the bread and goatcheese on top, add the crushed walnuts, mix the truffle paste with a spoon of truffleoil together with some salt & pepper and drizzle it over the plates.
