I'm crazy about red beet combined with smoked mackerel! I came to this recipe when I was feeling hungry one day and I didn't feel like going out to do some grocery shopping. I opened my fridge and there we're all left-over veggies and mackerel. So I decided to combine them and it turned out GREAT! Ingredients:
- Smoked Mackerel - 2 spoons of cottage cheese - 1 teaspoon of horseradish - 1 red beet (I bought them pre-cooked) - some coriander - some pepper and salt What's next? slice the red beet in very thin slices, I used my spirooli for this (use the 'razor-blade'), spread it nicely over your plate. Mix the cottagecheese with the horsesadish and some pepper and salt to taste. Add the mackerel and coriander on top and you are done! Ain't this easy peasy?! Enjoy!
