I absolutely LOVE the refreshing taste of Lemon and Lime. You might not think of combining the two of them together in a dish but I highly recommend you to give this combo a try! How I got to the point of using them both was when I was making these wholesome bliss energy balls and I realised I didn’t have enough lime so I just naturally switched over to add some extra lemon zest and seriously… this upgraded my recipe in such a good way that I of course had to share it with you guys :D ! Even though I used quite a lot of lemon and lime these treats are no way near to a sour taste what so ever. They’re super sweet and full of nutrients. So yeah, a delicious sweet snack to treat yourself and the lovely people around you is always a good idea. Scroll down to get this super easy recipe! Ingredients:
1 cup of raw almonds 1 cup of pitted dates (remove the pit yourself) 1/5 cup of grated coconutcrisps Zest of 2 limes Zest of 1 lemon *some extra coconutcrisps to cover the balls with What's Next?!? Use a foodprocessor to chop the raw almonds into a powdery structure. Remove the pit from the dates and mix it together with the almonds into a sticky dough using your hands (you can use a foodprocessor to for this step but somehow I think it’s nicer to use your hands for this recipe). Now add the coconutcrisps and zest from the lemon and limes and make sure all the ingredients are spread evenly into the dough. The dough should feel sticky but not to sticky, if it’s to sticky then make some extra almond powder and add it or if you’re more into coconut flavour then add in some extra coconutcrisp instead. Now roll them into bite size balls and cover them in coconutcrisps using a bit of pressure in your hands. Hope you’ll like this recipe! Xoxo The Cookteaser
