I made myself a super healthy vegan dish, Garlic-Coriander-Cauliflower! The funny thing was, while I was prepping this dish I of course made some ' in-the-making pictures' and when I posted it on 'Instagram' my lovely friend S. asked me on 'Instagram' if she could join me for dinner, duhh of course! She's more then welcome, love her! Only freaky part was that She literally stood in my house just 5 minutes after texting her back! Hmm..Spontaneous or not.. This is officially my first Instagram-Date! haha. This dish is really easy to make and super healthy, you can eat this dish warm but it's also super delish eating it cooled of the next day to upgrade your salad or so. So no need to cut the cauliflower in half, just finish it all up, you really won't regret it! Serve this as a side dish, or like I did with some smoked salmon on the side, Or eat this together with a nicely grilled piece of salmon, chicken or steak and you're also done ! :D

Move your sexy ass to the store and get these ingredients:
1 bunch of coriander
1 lot's of Garlic
some salt & pepper to taste
* Option is to add a red pepper if you like to spice this dish up
- Preheat the oven on 220 Celcius
Cut the cauliflower in little pieces (not to small not to big), chop the onion and 4 gloves of garlic (leave the skin on) very rough. Set this aside.
Get some more garlic and get rid of the skin, and blend it with the coriander, use the ugly part to blend. We need the leavy part later of the coriander!
Get a nice big wok on high fire, and add the paste of garlic and coriander together with some coconut oil. When you here it crisp add the chopped garlic and onion (and red pepper, if you like it spicy). stir this for half a minute and then add the cauliflower and mix this all in with the herbs on max fire. After a few minutes add a shot of soy sauce, stir it well for 2-3 minutes. Get it of the stove and place everything on a baking tray! Set the timer on 10 minutes, meanwhile chop some coriander leaves and sprinkle that on top of the dish the LAST 1 more minute. (otherwise the leaves will burn and be ugly looking) OOoohh the smell is just amazing!
