As you guys know I LOVEEE to experiment in the kitchen, I mean really...worst case scenario is that you have to throw away your food. Luckily I never had to do that (knock on wood)..but really... don't be such a pussy and experiment a little (in other words..have some fun in the Kitch...Bitch)! Last week I was making quinoa in the evening for my lunches the following days at the office. But then I totally forgot to make myself a proper diner :| so I looked into my fridge and it hits me.. Quinoa + Egg = Quinoa Cookies! Steve Jobs would have said: (a + 3) × (a2 – 4) = (a + 3)(a2 – 4) LOL Ingredients (for 7-8 quinoa cookies): - Quinoa - Kale (I used frozen organic kale) transl. boerenkool in Dutch - mushroom broth, I used those little cubes, so easy and it makes your quinoa taste so much better! - 1 egg How to make these delish Cookies: - make sure you boil the quinoa in a tasty broth, I boiled mine in wild-mushroom broth and added some kale to it.. check if it needs some extra (himalayan) salt and pepper. When the quinoa is done let it cool for a while (if you add the egg when the quinoa is still hot you won't be able to make firm cookies cause the egg will scrample) - use 1 egg and mix it with 10 spoons of the cooled quinoa.. mix mix mix... add some coconut oil on a frying pan and use a spoon to make nice even cookies. As you know..I need to eat chilli on just about everything..but I think some of you would like some ketchup or mustard on the side to give it that extra hint. Next time I'll try to make Thai Fish Cookies with coconut flavoured quinoa instead of flower.. MMmm.. it's weird how these ideas just pop into my head! :|
