So of I went.. the quinoa was already cooled of by now.. I took a glimpse in my kitchen cabinets and all my weckpots filled with superfoods, nuts & seeds we're right there in front of me.. and then it just HITS me...PIE....QUINOA PIEEEEE!!!!!
I took some baking paper and put it in the baking tray and I flattened the substence using the back of my spoon.
I had my oven on 170 C for like 30 minutes. and TADAAAA..here's your super duper healthy quinoa pie full of good stuff your body craves for!
- Cold leftover quinoa (really important it's cold, otherwise you'll get scrambled eggs when you add them..)
- Goji berries
- Mix of Crushed Nuts
- 2 eggs
- broken Lin seed
- Chia Seed
- 1 mashed banana
- Cocos crisps
- Raisins
- a teaspoon of Cinnamon
* ps.. If you like to have the pie more sweetened you can add some honey or agave syrup maybe?
Now What?
Preheat your oven on 170 C. As I mentioned.. just mix everything well..press it all down in your baking tin and put it in the oven for something like 30 minutes.. The pie should be crispy on top and sides.. then you know it's ready!
My lovely friend S. came over the next day and I let her try out my newest addiction and she got so excited she made her own version the next day.. As I totally forgot to make nice pictures she send me hers (the first picture of this post) Well I hope you like this recipe as much as we do!
