My favourite season when it comes to food is definitely Summer! I just love love LOVE summer fruits so much!! I especially have a soft spot for red coloured fruits like strawberries, raspberries, cherries and watermelon. Really, I just can't get enough of it! Other then just eating a watermelon in its pure form it's also amazing to use in savoury dishes like this Refreshing Summer Gazpacho with this tangy Feta Mousse. MMMMmm.. this combo is just mind blowing. This dish is also super easy to make and will for sure impress all your loved ones! I mean, just look at it, what a stunner this dish is!! Ingredients for 4 servings: 1/4 red onion 2 gloves of garlic 1/2 a cucumber 3 cups of watermelon chunks 2 cups chopped tomatoes 1/2 cup of red wine vinegar a drizzle of olive oil Some salt and pepper to taste some fresh chives (chopped finely) A piece of red pepper (if you like things a bit spicy, I sure do!) * slice up some extra cucumber in thin slices to serve the soup with :) Feta mousse: 100 gram of feta cheese 8 spoons of (soy) yoghurt the white part of a spring onion Place all ingredients in a food processor and process until well blended and very smooth. Add more soy yoghurt or a bit of water as needed to get the nice structure. Cover and refrigerate for at least one hour before drizzling it over the soup. What's Next?!? We start with making the Feta mousse first. Place all the feta mousse ingredients in a food processor and process until well blended into smooth 'mousse'. Add more (soy) yoghurt or a bit of water as needed to get the perfect structure for drizzling. Cover and refrigerate for at least 20 minutes before serving it. Now combine all the gazpacho ingredients in a foodprocessor and pulse until it's smooth. Add in some salt and pepper to your taste. Slice up some thin cucumber strings and serve them with a drizzle of the feta mousse and some finely chopped chives. MY oh MY, this dish is gonna blow your mind! I'm telling you!
