Oh look what I found!! As I was scrolling through my pictures on my phone I found these pictures from something I made like WAYYYY back! I think this recipe is from 3 months ago or so..
Well better late then never I guess...For this dish you don't need any fire! It's super easy AND super tasty! scroll down for the recipe.
Ingredients (4 people):
- 2 zucchini's
- a bunch of Basil leaves
- 1 whole smoked mackerel (you can filet them yourself, but you can buy them just all cleaned to go)
- sundried tomatoes
- 1 spoon of spicy red paprika powder
- some pepper to taste ( I don't think you need salt for this dish, the mackerel is salty enough..my opinion)
* If you like spicy food you can add a chilli
Turn the zucchini's into veggie-spaghetti-strings using a spiral slicer. I used my Spirooli (duh)! Then put the sundried tomatoes and the paprika powder into the food processor and mix it until it's a thick smooth paste.
Use your hand to shred the basil leaves and mix this together with the zucchini-spaghetti and tomato paste.
Again use your hands to break the smoked mackerel into little bits and add this to the rest of the 'pasta'
Well this is it..no cooking involved for this dish! Love it! If you don't like fish, leave it out and instead add some capers to the dish.
