A couple of days ago I made this super healthy and delish stir fried noodles! Not just any noodles.. but Veggie noodles freshly made using my Spirooli and half a piece of a zucchini! This recipe is very easy, you'll only need 1 pan! I didn't know what to make myself ..and I just used my leftovers in the fridge.
Ingredients you'll need for 1 person:
1/2 Zucchini Noodles (Dutch transl. = courgette) / using your Spirooli
1 small red onion (finely chopped)
1 garlic (finely chopped)
a teaspoon grinded ginger
some crushed cashew nuts
some coriander leaves
1 lime leave
1/2 shot of Soya sauce (think of a tequila shot)
5 drops of sesameoil
What to do?!:
get your pan and add a bit of coconut oil (you can use any vegetable oil), when the oil is on temperature add the, garlic, ginger, limeleave and the red onion and stir it all well on max heat. After 2 minutes you can add the zucchini noodles, mix this all well and add the soya sauce, keep the temperature up high all the time. At last, add the cashewnuts and coriander together with some drops of sesameoil. And your DONE! Holy Cow.. really?! YES REALLY
Be creative, I mean.. If I would have had mushrooms in my fridge I would have probably add it to this dish, or some bits of broccoli, that will all go really well with the other ingredients I used.
