Today I had my friend G. over for dinner. I felt like eating vegan today.. so Tofu it is. I asked G. beforehand if she's into tofu and sure she is! I bought a nice piece of pure organic tofu! These days even my friend Albert sells Organic Tofu! This dish is really easy and quick to make, and the taste is just delish! The thing with tofu is that most people say it taste like nothing or that they don't like the structure of it Well there are many different sorts of tofu, but the one I used for this dish is like the more hard one. So the organic tofu you find in your supermarket is perfect to grill, it wont fall apart in little tofu crumbs when you grill it. My secret is to grill my dices of tofu in some coconut-oil mixed with a spoon of 'Tom Yum' paste ( that's actually the paste you use to make the base for your thai tom ka kai soup ), this is my way of 'easy cooking' when I'm just to lazy to slice laos, ginger, garlic, red pepper and lemon-grass in little pieces. The sauce I put on top is super super easy and a major success!! Crush a handful of cashewnuts and then add 3 shots of ketjap manis in a pan, add the cashew nuts and 2 shredded lime leaves, add the juice of half a lemon and 1 spoon of the Tom Yum paste. stirr it on max. heat for 2 minutes and pour it over the tofu and veggies! The nuttiness of the cashew nuts combining with the sweet and sourness of the ketjap manis and lemon is just really TO DIE FOR! with this sauce everything taste good!
I even had tofu haters here.. and whenever I make this.. they leave my hous as Tofu Lovers! seriously.. not kidding!
