I recently saw a magazine where they had a great tip to make your own lunch in a Weck-Pot! You can get those in stores like the 'Xenos', 'Blokker' and 'Hema' for just a couple of bucks! They look very nice and are also eko-friendly because you can use them over and over. They're made out of thick glass so no need to worry that it will break, especially for me.. I can be very clumsy sometimes. As I want to loose the kilo's I gained after the Christmas holidays I will stop eating bread and pasta these upcoming weeks, yes it's true people.. it really helps a lot if you want to loose just a bit of kilo's to cut the carbs out of your diet. If you really can't resist carbs, then only skip them with dinner. This way you will reach your goal too but it might take a bit longer. I thought it would be nice to have a delish Quinoa salad for lunch tomorrow, as my new workplace isn't in the centre of Amsterdam, I'd rather make my own lunch instead of the only option is to go out for a boring 'non-organic take away sandwich'.
I boiled the Quinoa in a stock of mushrooms (get those stock-cubes in any organic store), this way the quinoa will be nice flavourful and you don't need any extra seasoning at all. I cooked the carrots and broccoli for just a couple of minutes in the same stock as the quinoa. In the meantime I grilled some mushrooms with some cumin, salt and pepper. When the Quinoa is done let it cool in the fridge, and after the veggies are drained rinse them with ice cold water. Check when all the ingredients are cold and then layer for layer add everything in the weckpot, I also cut an Jazz Apple in slices and added them. Last thing to do is get a fresh lime and squeeze the lime juice over the whole dish! Close it, and you're DONE! I really am looking forward already to have my lunch tomorrow..
