I just love love LOVE pancakes, but they're kinda unhealthy, but with this recipe there's just no way you'll ever feel guilty again after eating pancakes! There's no use of flour or dairy! This is actually even easier then making the classic pancakes you grew up with, no everlasting whisking in a bowl to get the lumps out, only two ingredients you need! You probably have them already in your house.. EGGS & BANANAS (tip: add some cinnamon too)!
Ingredients you'll need for 1 big pancake or 2 thin pancakes more like crepes
- 2 eggs
- 1 banana
- a hint of cinnamon
- a bit of coconutoil (you can use any vegetable oil or butter too)
for the topping:
- coconut crisps
- almond crisps
what to do?
Whisk all the ingredients in your kitchenmachine or you can also use a fork!
Use a bit of coconut oil and bake your pancakes like you would normally do! When both sides turned into goldenbrown get it of the heat. Sprinkle some coconut and almond crisps on top.. no need for salt, no need for sugar, let the ingredients speak for itself.. ENJOY!! I just LA-LA-LOVE it! A great way to start your day!
