Ingredients for 4 persons (as an starter), 15 minutes.
- 1 big bag of (wild) spinach
- the half of a beef stock cube (use an organic brand, you can use vegetable stock cube too if you're vegan)
- 1 red pepper (get rid of the seeds if you want to save your tongue)
- 1 glove of garlic
- 2,5 cups of water
- 200 ml. cocos milk
What the F%ck do I do?!
Get a pan, and put the water and the stock cube in, wait for it to boil, then add the coconut milk. just a second before it starts to boil add the rest of the ingredients, the spinach, red pepper and garlic, immediately get your immersion blender and start blend the soup. (don't let the soup get to a boiling point, most of the essential vitamins will be lost otherwise)
The Soup is READY to be served! Enjoy!
( to upgrade your soup you can add some chunks of goatcheese and some crushed roasted pine-nuts before serving it out. This will give your soup just that little extra!
