Ingredients for 2 persons
- 1 small can of coconut milk
- 2 spoons of Thai Red Curry Paste (Use an organic brand ! )
- 1 spoon of thai fish sauce
- 1,5 spoon of soy sauce (I use Kikoman Soy Sauce)
- 1 spoon of coconut oil
- 2 lime leaves
- a chunk of ginger
- 2 gloves of garlic
- 1 (organic) tofu (If you don't like it vegan style use beef of chicken instead)
- a handful of green beans
- 1 tomato (sliced in 8 pieces)
- a handful of mushrooms
- crushed cashewnuts
- sesame seeds
- some coriander leaves (if you don't like coriander, use spring onions instead)
What to do:
- get a wok pan, put the coconut oil in and add the, garlic, ginger, lime leaves, tofu, and mushrooms, fry it till the tofu is goldenbrown, then add the Curry Paste, stir it all on high fire, add the coconut milk wait for it to be hot (not boiled) and then add the veggies, thai fishsauce, soy sauce, and the tomatoes, wait for 5 minutes and you're done, serve it in a bowl, and sprinkle some sesame seeds over the dish, the coriander and the crushed cashewnuts.
